Time flies and I can't believe it's only two more days until Christmas Eve. We've been having a few weeks of ups and downs, dad lost some more weight for a few weeks, but at today's weigh-in he had finally gained 1.6 kg!! Now up at 74.4 kg.  Yay. What a wonderful christmas present for us all.

Oh god, I have to wake up n about 3 hours to head down to the laundry room and check if my washing is dry. But then I might be able to sleep another two or three hours. Then I have to walk over to the pos toffice and collect some parcels, pack the last bag and make sure I don't forget all the present and the baked stuff and clean laundry, and then ( Read more... )

Wow, I've actually managed to do some Christmas baking. Well, perhaps not so much baking as caramel boiling, but still. I tried out a recipe for saffron toffee, and they do seem to have turned out quite well even though I forgot to add the butter at the end.

3 dl sugar
3 dl double cream (40% fat)
1 dl golden syrup or treacle
0.25 g saffron

After the spinning tonight, my sister and I wrote our Christmas cards and I did a batch of Christmas Knäck. They  turned out quite well, tasted wonderful but looked perhaps a little too home made. I did the very simple traditional recipe: 2 dl sugar, 2 dl cream and 2 dl molasses boil together in a pan for 20 minutes, then add chopped almonds. I ( Read more... )
